Kashmiri Chai and Benefits:

Many tea plantations are found in Asian countries such as India, China, and South Asia, in which tea production has created a wide variety of tea. Also well-known is Kashmiri tea, which takes on different characteristics depending on where it is brewed. It is also known as noon chai.

The fragrance and color of this chai are much more substantial.  Rather than the time of day ‘noon,’ it refers to the ‘salt’ in the local language. As a result, noon chai is also known as Kashmir tea or pink tea because of its distinctive pink color. Additionally, since salt is a component in Kashmir tea, it is sometimes called salt tea. Consuming Kashmiri tea has a multitude of health advantages which are as follows:

Kashmiri Chai Recipe:

This tea is made with milk, tea powder, and salt. Baking soda creates the red color of this tea. This tea is strong and has a pleasant aroma. This tea has a sharp, bitter flavor complimented by the savory taste of salt and milk. Almonds, pistachio, and cinnamon may be added to the tea, along with other herbs or ingredients.

INGREDIENTS:

For Ice Water:

·         1 cup normal temperature water

·         2-3 big ice cubes

For Kashmiri Chai

  • 1 cup water
  • 2 tbsp Kashmiri chai leaves,
  • Two star anise
  • 6-8 green cardamom seeds
  • Two entire cloves
  • 1-inch cinnamon stick,
  • 1/8 tsp baking soda
  • 1 cup full-fat milk
  • Half cup of heavy whipping cream & milk 
  • 1/4 tsp kosher salt or sea salt
  • 2-2.5 tbsp sweetener of your choice, 

For Serving:

·         1 tbsp crushed almonds, 

  • ½ tbsp unsalted crushedpistachios, 

INSTRUCTIONS:

Make ice water by combining room temperature water and 2-3 big ice cubes and setting aside.

Heat a medium saucepan at a high temperature. Bring to boil the water, Kashmiri chai leaves, star anise, green cardamom pods, cloves, and cinnamon.

When it reaches a boil, add the baking soda. It will bubble somewhat. Let this mixture boil for 5-6 minutes on high heat. Use a spoon to scoop and pour back the tea. The foam in the water will change color from light green to a rich pink. If not, add 1/8 teaspoon baking soda. The water will gradually evaporate.

Pour in the ready ice water. If you want to intensify the color, aerate it many times. Combine the milk, half-and-half, salt, and sweetener in a pan. Allow it to come to a gentle boil, then remove from the heat. Allowing it to boil for too long will cause it to lose part of its pink hue. Adjust the salt and sweetener to taste.

Replace the half-and-half with milk if you like it lighter. Similarly, if you want it more prosperous, increase the half-and-half and reduce the milk.

Pour the tea into glasses and top with crushed almonds and pistachios, if liked.
